冬季不同舍饲密度对育肥羊屠宰性能及肉品质的影响

摘要: 本试验旨在研究冬季不同舍饲密度对育肥羊屠宰性能及肉品质的影响.选用6月龄健康的阿勒泰大尾羊杂交1代断奶羔羊144只,随机分为4组,每组36只,试验1~4组每只羊占地面积分别为0.35、0.70、1.05和1.40 m2.试验期45 d.结果表明,不同舍饲密度育肥羊的胴体重、屠宰率、净肉重、净肉率具有相同的变化规律,均表现为:试验1组<试验2组<试验3组<试验4组,其中,试验4组胴体重、屠宰率、净肉重、净肉率较试验1组分别显著提高20.65%、11.00%、30.40%和19.73%(P<0.05);4个试验组肉色都在3~4分之间,均属羊肉正常颜色;大理石纹均在1~1.1分之间,试验1组pH最低、剪切力最高,嫩度较差.综上所述,在本试验条件下,以低密度(1.40 m2/只)饲养的育肥羊在屠宰性能和肉品质方面表现较好,以高密度(0.35 m2/只)饲养的育肥羊产肉能力和肉品质较差.

Abstract: This experiment was conducted to study the effect of different stocking density on slaughter performance and meat quality of fattening sheep in winter.A total of 144 6-month-old Aletai fat tailed sheep F1 hybrid generation were randomly divided into 4 groups with 36 sheep in each group.Each sheep respectively covered an area of 0.35, 0.70, 1.05 and 1.40 m2 of groups 1, 2, 3 and 4.The whole experiment period was 45 d.The results showed that carcass weight, dressing percentage, net meat weight and net meat percentage decreased from group 4 to group 1.Compared with group 1, the carcass weight, dressing percentage, net meat weight and net meat percentage of group 4 were significantly increased by 20.65%, 11.00%, 30.40% and 19.73% (P<0.05), respectively.The scores of meat color for all groups was 3 to 4 points.The marbling was 1 to 1.1 points, the pH was the lowest, the shear force was the highest, the tenderness was the worst for group 1.In conclusion, under the condition of this experiment, the low breeding density (1.40 m2) had the better slaughter performance and meat quality, the high breeding density (0.35 m2) had the reverse effect.
