摘要: 随着人民生活水平的提高,牛肉消费量在快速增长,与此同时消费者对牛肉品质的要求也越来越高,如何评价牛肉品质越来越受到重视。作者对牛肉品质评定的感观指标、内在指标以及影响牛肉品质的因素作一综述。

Key words: With the improving of people’s standard of living; the consumption of beef is quickly increased. At the same time; consumers’ demand about meat quality is increasingly enhance. How to evaluate beef quality is also been emphasized. The paper summarized palpability indexes; inherence indexes for evaluating the beef quality as well as factors that affect the beef quality.
