Bioactive Components in Eggs and their Potential Applications

Abstract: Eggs as a main source of energy and nutrients, contains a variety of bioactive substances. Thanks to the advances in biotechnology, especially the research of egg bioreactor, the composition and underlying functions of these components are being identified. Moreover, they are increasingly applied to medicine, food, chemistry or biological products industry. Hence, it is the high time to recognize, define and utilize them and their biological properties in a more profound way to improve the product value of further processed eggs. This review will focus on the latest progress and future prospect of this field.
