Comparison on the Meat Quality in Gayal×Brahman (GBF1) Cattle and Yunling Cattle

Abstract: This study was aimed to compare the meat quality of Gayal×Brahman (GBF1) cattle and Yunling cattle, evaluate the potential of crossbreeding utilization of Gayal.GBF1 cattle and Yunling cattle which had same ages and same gender were selected to be fattened and slaughtered.100 meat samples of GBF1 feedlot steers and Yunling feedlot steers were collected and sealed in clean fresh frozen bag.With the meat samples from Yunling feedlot steers as the control, the shear force, lose water ratio, water holding ratio and cooking loss of meat samples from GBF1 were determined.The results showed that the shear force of shoulder crest from GBF1 cattle were significantly higher than that from Yunling cattle (P< 0.05), and there were no significant differences in the others meat samples (P> 0.05).The average shear force, average lose water ratio, average cooking loss of 10 different cuts from GBF1 cattle were 3.50 kg, 24.15%, 27.56%, respectively and lower than that of Yunling cattle (P> 0.05).The average water holding ratio was 64.60% and higher than that of Yunling cattle (P> 0.05).In conclusion, the meat quality of GBF1 cattle was good, similar to that of Yunling cattle.
