摘要: 作者简要介绍了大豆中主要的抗原蛋白Glycinin和β-Conglycinin诱发畜禽产生致敏作用的机理,并综述了缓解大豆抗原蛋白致敏作用的机制,对于指导生产中大豆蛋白的合理利用提供了科学依据。

Abstract: The mechanism and attenuation of allergic reaction in livestock induced by soybean glycinin and β-Conglycinin have been reviewed in this article,which provides scientific basis for the rational utilization of soybean proteins in industry.
