摘要: 随着对脂肪研究的深入,人们认识到脂肪是人和动物体不可缺少的、具有重要生理功能和调节作用的营养物质。作者综述了脂肪对脂类代谢、心血管系统和血液、免疫机能、细胞膜功能、大脑功能、基因表达方面的生理功能及作用机制的研究进展。

关键词: 脂肪; 多不饱和脂肪酸; 营养

Abstract:

With studying improvement, the fat was learned to be an indispensability nutritive material for animal and human being. It possesses important function of physiology and nutritive metabolize regulating. This article reviewed the physiological function and metabolism mechanism of fat, which included the effect of fat on metabolism, blood and cardiovascular system, immunity function, cell membrane function, brain function and gene express.
