摘要: 通过开展牛奶中主要风险因子分析研究,提出风险因子的分类、预警和消除措施,是国际上提高乳品质量安全水平通用的做法,值得学习和借鉴。农业部奶产品风险评估实验室(北京)对牛奶质量安全的主要风险因子,包括霉菌毒素污染、兽药残留、农药残留和激素类药物残留等,进行了分析和比较研究,形成的系列结果将陆续刊出,以期对我国牛奶质量安全风险因子的分析、预警和消除研究有所帮助。

Abstract: It is a common road to improve milk quality and safety through risk factor analysis in different countries. The main risk factors in milk were studied by Milk Risk Assessment Laboratory (Beijing) of Ministry of Agriculture of China, which include mycotoxin contamination, residues of veterinary drugs, pesticides, and hormones et al. The series of the research results will be reported and expected to assist the development of the system of milk risk factor analysis, early warning and removal in China.
