摘要: 鸡蛋内含物质是胚胎发育的主要能量和营养来源,其含有多种生物活性成分。伴随着生物技术的发展和鸡蛋生物反应器的提出,这些活性成分和作用被逐步发现并应用于医药、食品、化工及生物制品工业。因此,了解并加以利用这些生物活性物质成为了禽蛋制品深加工和提高禽蛋产品的商品价值的首要问题。作者将围绕鸡蛋内生物活性物质的最新研究进展及应用前景进行简要的介绍。

Abstract: Eggs as a main source of energy and nutrients, contains a variety of bioactive substances. Thanks to the advances in biotechnology, especially the research of egg bioreactor, the composition and underlying functions of these components are being identified. Moreover, they are increasingly applied to medicine, food, chemistry or biological products industry. Hence, it is the high time to recognize, define and utilize them and their biological properties in a more profound way to improve the product value of further processed eggs. This review will focus on the latest progress and future prospect of this field.
