摘要: 大蒜素是大蒜提取物的主要有效成分,具有多种生物学功能,在医疗、保健和畜牧生产中被广泛应用。作者主要阐述大蒜素的制备及相关产品开发的动态。

Abstract: Allicin was the main component of allium sativum L, which had diversiform biological functions. It had been used abroad in sterilization, healthcare and animal production. The preparation of allicin and the advance in exploitation of relational product had been elaborated in the review.
