Key words: With the improving of people’s standard of living; the consumption of beef is quickly increased. At the same time; consumers’ demand about meat quality is increasingly enhance. How to evaluate beef quality is also been emphasized. The paper summarized palpability indexes; inherence indexes for evaluating the beef quality as well as factors that affect the beef quality.
