Abstract: β-lactam antibiotics has been applicated for prevention and control of animal infection in animal husbandry.The excessive level of such antibiotics caused by its abuse and nonobservance with the withdrawal period，human health has been widely threatened by the antibiotic residual in animal-derived food，so it needed rigidly control the antibiotics residues in animal-derived food.In this paper the current detection methods of β-lactam antibiotic residues have been introduced，including microbial detection，immunological detection，physical and chemical testing，the advantages and disadvantages of each method has been analyzed. The purpose of this paper will provide a valuable reference for the improvement of the antibiotic residue detection technology in animal-derived food.
